Check out the http://pomegranatecenter.org/ in Seattle. All their projects are community designed and built. 
I ran a community arts program in National City, CA and we were trained by them. We completed around 10 community designed & built projects on which I'd be happy to share information. Email me and I can send info & photos. Tile-making or glazing have been the most successful but, we had artists guide community members in creating sculptures, building artistic retaining walls, funky fences, and painting murals.

For landscape work check out http://rootedinplace.com/ we partnered with them frequently. Specifically, the Paradise Creek Gathering place project may be relevant to your work.
